The California Energy Commission is currently pursuing many programs which are aimed at decarbonizing our energy infrastructure including all-electric cooking, space heating and water heating. The commercial foodservice industry has started to adopt efficient electric cooking equipment as the first step towards all-electric, zero-net-carbon kitchens. This class explains how the foodservice industry can take the most important next step towards zero carbon by addressing one of the biggest barriers: How to replace the traditional gas-fired hot water systems with electric heat pump water heaters. Learn how heat-recovery dishmachines, effective plumbing design, and decentralized, point-of-use water heating are necessary to make heat pump water heaters perform effectively in the demanding commercial kitchen environment. SESSION OVERVIEW This is a face-to-face day and a half program with attendees arriving into Baltimore/Washington International Airport the afternoon prior to the training session. Marra Forni will provide for non-cancellable airfare, overnight accommodations (attendees are responsible for incidentals), and ground transportation. Flights will be booked by Marra Forni and tickets are non-refundable to secure best pricing. Attendees are responsible for reimbursement to Marra Forni in the event of cancellation. On the date of arrival, there will be a group tour of Marra Forni’s masonry manufacturing facility (located in Elkridge, MD) and a group dining event. Training will continue on day 2 beginning at 8:00am, and concluding at 4:00pm depending upon outgoing flight schedules. There will be a 60–90-minute learning lunch session (attendees will have hands on experience making traditional neapolitan pizza). Sessions will be offered on various dates throughout the year and communicated in advance for posting on Marra Forni and FCSI website calendars to promote the learning opportunity.
